ECD recipe- 9/2 Simple Baked Eggplant Parmesan for One/Nancy

Ok group I'm not much of a cook and I can't go grocery shopping till this weekend but here is my very simple recipe I will try this evening.

Sliced eggplant
Tomato and onions- chopped 1/4 c each
Fresh herbs- oregeno and basil
Extra virgin olive oil- 1 T
Hard cheese slice

Cook veggies and herbs in olive oil. Layer everything and bake for 15 minutes at 350 degrees.

Calories-150, Fat- 4, Protein- 4, Carbs- 8

I know it almost sounds too simple to be good but it was delicious and I just baked it for 10 minutes in my toaster oven. I'm cooking 2 days in a row!!

I've never had eggplant ... what does it taste like? Anything to compare it to?

It doesn't taste like much of anything Shannon - and it's got sort of a squishy texture. Definitely an acquired taste in my opinion, but with these other ingredients it's sounds tasty.

I love eggplant, it has sort of a pleasant almost mushroom taste I guess....

I love eggplant too, with marinara sauce, and almond cheese mozzerella grated on top!
